Beef and Broccoli is one of my favourite chinese takeout foods. I wanted to find a way to make a healthy version of this recipe. I think it hits all the right spots! Enjoy :)
Healthy Beef and Broccoli Recipe
Macros w/ Rice - 372 Calories - 36g Carbs - 11g Fat - 31g Protein
Macros w/o Rice- 270 Calories - 13g Carbs - 11g Fat - 29g Protein
Ingredients
1lb Flank Steak, Thinly sliced against the grain
4 Cups of Broccoli Floret, Cut into 2” pieces
3 Garlic Cloves, minced
1 Tsp Grated ginger root
1/4 Cup Soy Sauce
1 Tsp Sesame Oil
1 Tbsp Coconut Sugar
1 Cup Beef Broth
2 Tbsp Cornstarch
2 Tbsp Water
2 Cups cooked rice (If using)
Instructions
1. Heat a large pan or wok over medium high heat and spray with non-stick cooking spray
2. Cook steak, in batches if necessary, for 60-90 seconds per side. Remove onto a clean plate.
3. While the steak cooks, combine the sesame oil, Soy sauce, Coconut sugar, beef broth in a bowl and stir to combine.
4. Add in beef broth mixture, bring to a boil and add the broccoli to the wok and cook for 4 minutes until crispy tender, stirring occasionally.
5. In a separate bowl, combine the cornstarch and water and stir until well combined. Add to broccoli mixture and bring sauce back up to a boil, until the sauce thickens.
6. Add the beef back into the wok and stir until everything is good and coated.
7. Divide into 4 servings and serve with 1/2 cup of rice per serving. Top with sesame seed if desired.
