Mince Meat/Potato/Green Pea Rice

1 KG Minced Meat
1 and a half KG Rice
4-5 Potatoes
2 Large cups Green Peas
4 Chopped Onions
1 piece Ginger Slice
200G Yoghurt
1 Cinnamon Stick
1 table spoonCumin Seeds
Half table spoon Cloves
1 table spoon Black Cardamom
4 Whole Black Pepper
3 table spoon Salt
1 cup of Oil

Place Oil Into The Pan
Add Chopped Onions & Ginger Into The Pan
Whilst Onions & Ginger Become Brown, Blend Cinnamon Stick, Cumin Seeds, Cloves, Black Cardamom & Whole Black Pepper Into A Fine Powder.
When Onions & Ginger Have Become Brown Place The Blended Contents Into The Pan.
Add The Salt
Add A Cup Of Water
Cook For Approx
Add The Yoghurt Into The Pan
Stir Contents In The Pan Well
Add Half Cup Water Again And Cook For Approx
Add The Minced Meat Into The Pan
Cook For Approx 10/15 Mins On Full Heat Until Water Evaporates.
Add Chopped Potatoes In & Cook Again For Approx 2 Mins.
Add The Green Peas Into The Pan & Stir Well, Then Leave To Cook Again For A Few Minutes.
Add approx Hot Water Into The Pan. Cook Again For Approx 2 Mins.
Add In The White Rice And Cook On Full Heat Until Water Evaporates.
Now Cover Lid With A Cloth & Cook Rice For Approx 2 Mins On Full Heat Then Approx 20 Mins On Low Heat.

Lamb Karahi

2 KG Lamb Meat (boneless)
4 Onions (Grinded paste)
2 table spoon Red Chilli Powder
Half tea spoon Turmeric Powder
1 tea spoon Garam Masala
1 table spoon Coriander Powder
1 table spoon Ground Pepper
4 Green Chillies Crushed
2 Green Chillies Chopped
8-10 Garlic & 1 Ginger (Grinded paste)
4 chopped Tomatoes
1 cup of Fresh Coriander
200G Of Yoghurt
1 Lemon
1 cup of Oil

Place The Boneless Meat In The Pan And Add Some Water In With It.
Add 1 Tablespoon Of Salt
Cook For 1 - 1 1/2 Hour On Medium Heat Until Meat Becomes Soft & Tender. (Lid On)
Whilst Meat Is Cooking Place One Cup Oil In A Separate Pan.
Add The Onion Paste Into The Pan
Add Garlic & Ginger Paste
Cook Until Light Brown
Add Tomatoes Into Pan
Add All Masala Powders Into Pan (Red Chilli Powder, Turmeric Powder, Coriander Powder, Ground Pepper & Salt).
Cook Approx
Add Crushed Green Chillies
Add 1 Cup Water
Put The Lid On & Cook For Approx 5 Minutes.
After 5 minutes Take The Lid Off & Add Yoghurt.
Cook Again For 5 Minutes With The Lid On.
Now The Masala Is Ready So Add The Lamb Meat You Prepared Earlier In to The Masala (Make Sure It Is Soft And Tender)
Stir Well
Squeeze 1 Fresh Lemon On Top
Add Fresh Coriander & 1 Teaspoon Garam Masala
Now Cook Again With The Lid On For Approx 5 Minutes On Low Heat.

Pakorah’s

Half KG of Gram Flour
3 Onions chopped
1 bowl of Spinace
1 bowl of Fresh Coriander
4 chopped Potatoes
1 tablespoon Salt
1 tablespoon of Red Chilli Powder
1 table spoon of Coriander Seeds Whole
1 tablespoon of Cumin Seeds
6 Green Chillies
Oil

Place Gram Flour Into A Bowl.
Add Salt.
Add Red Chilli Powder.
Add Whole Coriander Seeds.
Add Cumin Seeds.
Add Chopped Green Chillies.
Add Chopped Onions.
Now Mix All Contents Well.
Now Add The Fine Cut Potatoes Into The Bowl.
Add Spinach
Add Fresh Coriander
Now Mix All The Contents In The Bowl & Add Small Amounts Of Water Whilst Mixing. (To Get A Nice Thick Mixture)
The Mixture Is Ready Now Take Small Chunks And Place Them In The Hot Oil To Fry.

Filled & Fried Large Green Chillies

4 boiled Crushed Potatoes (Mash)
1 teaspoon of Red Chilli Powder
1 teaspoon of Salt
Half a teaspoon off Red Chilli Flakes
1 Chopped Onion
Half a cup of Fresh Coriander
Half teaspoon of Cumin Seeds
2 spoons of Oil

Place Potato Mash In To A Bowl
Add Red Chilli Powder
Add Salt
Add Red Chilli Flakes
Add Chopped Onions
Add Fresh Coriander
Now Mix All Contents In The Bowl
Now Add A Teaspoon Of Oil In A Pan & Cumin Seeds Too
Place The Potato Mash Mixture In The Pan & Cook For Approx 2/3 Minutes
Add A Touch Of Salt Again
Now Let The Cooked Potato Mash Cool Down For Approx 20 Minutes
Now Cut Each Green Chilli (Make A Split In The Middle Of Each Chilli)
Now Use The Potato Mash And Fill Each Individual Spice
Now Make The Mixture To Use To Dip The Green Chillies Into
Add Gram Flour Into A Bowl
Add Red Chilli Powder, Red Chilli Flakes, Salt, Cumin Seeds, Whole Coriander Seeds, Carom Seeds & Dried Fenugreek Leaves
Add Chopped onions & Fresh Coriander
Now Mix All The Contents In The Bowl & Add Small Amounts Of Water Whilst Mixing. (To Get A Nice Thick Mixture)
Now Dip Each Individual Chilli In The Mixture To Cover The Whole Body
Fry In Hot Oil.

Filled & Fried Large Green Chillies Are Ready !!

Fried Pakorah Aubergines

1 Aubergines
Half a teaspoon of Red Chilli Powder
Salt
Lemon Juice

Fried Lahori Masala Fish

1 and a half KG of Silver Hake Fish
20 Garlic pieces
2 teaspoons of Carom Seeds
2 teaspoon of Salt
3 teaspoons of Red Chilli Powder
Half teaspoon of Turmeric Powder
