Moringa Chutney Powder! The Best Way to Eat Drumstick Leaves!! How to make a delicious and spicy chutney using dried moringa leaves, flaxseeds, garlic, chana dal, and urad dal. 🥣Ingredients:
2 cups dried Moringa leaves
3 tbsp chana dal (Bengal gram)
2 tbsp urad dal (black gram)
3 tbsp flaxseeds(Linseeds/agse)
4-5 cloves garlic
8-10 dried red chilies
1 tsp cumin seeds(Jeera)
½ lime-sized tamarind
2 tsp oil
Salt to taste

🥣Method:

Dry Moringa Leaves:

To dry fresh Moringa leaves, follow these steps:

1. Rinse the leaves well and separate them from the stem.
2. Spread the leaves out over a cotton cloth or tray.
3. Allow the leaves to air dry naturally indoors for 3-5 days.
4. Once dried, the leaves should feel crisp to the touch.
5. Store the dried leaves in an airtight container for use in a variety of recipes.

Dry roast the ingredients and powder it:

Heat a pan and dry roast the chana dal and urad dal separately until golden brown. Set aside.
In the same pan, dry roast flaxseeds until they start popping. Set aside.
Allow Cool down everything
Add a little oil in a pan add cumin seeds, wait until splutters and sauté the garlic cloves until golden.
Slightly roast the tamarind and red chilli for a few seconds until aroma.
Note: I used both spicy and color chilli here. You can use your choice of chilli according to your spice level.
Add Moringa leaves and roast for few seconds
Switch off the stove.
Allow to cool down
In a grinder, first blend the roasted dals, flaxseeds and salt into a fine powder.
Then add the sautéed cumin, garlic, tamarind, red chilli, and dried moringa leaves. Blend everything together to a fine powder.
Adjust the salt and mix well.
Store in an airtight container.
Enjoy this Moringa Chutney Powder with rice, dosa, or idli!
