HOW TO MAKE HOMEMADE PIEROGI FROM SCRATCH.
I am sharing my recipe for pierogi that you are sure to love. The dough is tender and the potatoes are so flavorful.
YOU CAN SEE MY ORIGINAL PIEROGI TUTORIAL HERE. I have since update my recipe for a better dough and flavor. Both recipes are good but I prefer the new one.

Dough Ingredients: (Makes approx. 48- 3.5" diameter pierogi)
3/4 cup of warm milk
4 T of butter (I add the butter to the milk and warm both up together)
1 t salt
3. 5 to 4 C all purpose flour
4 egg yolks
Mix all together until dough pulls away from the sides. Once mixed, let rest for at least 15 minutes. I cut into fourths and do 4 batches due to the size of my mat I roll on. Plus, it doesn't dry out the dough doing it all at once.
MASHED POTATOES:
Cheese & Potato Filling:
2 pounds of potatoes (I use baking potatoes)
Kosher salt (as needed to season the potatoes)
1 stick butter
16 ounces cream cheese
3 ounces sour cream
1 tablespoon granulated garlic
1/2 teaspoon onion powder
1/2 teaspoon black pepper
To Serve:
butter...lots of butter to drown your pierogi in.
1 onion sliced or diced, more if you like a lot of onion like I do.
Sour cream to serve on the side
