Yum (seasoning with lime, fish sauce, sugar and chili)
Goong (Prawn).
Recipe:
River prawn, 500g
Shallots, 3-4 small sliced
Lemon grass, 1 sliced
Galangal, 5-6 slices
Mushroom, 1.5 cups
Chili, as much as you like
Coriander, 1 bunch
Kaffir lime, 6-7 leaves
Thai chili paste, 1.5 tablespoons
Dry chili, 5-6
600g water
Lime juice, 3 tablespoons
Fish sauce, 3.5-4 tablespoons
Evaporated milk, 60g
Tutorial:
1) Chop and slice the vegetable ingredients
2) Devin the prawns
3) Add galangal, coriander root, shallots and lemon grass to boiling water
4) After a minute, add prawns and cook until orange and hard
5) Add mushrooms just before finished (80 % done)
6) Add Thai chili paste and stir paste into soup
7) Lower heat, add evaporated milk and seasoning
8) Before turning off heat, add kaffir lime leaves and fried chili and stir well
9) Turn of heat.
10) Serve hot
Tips:
1) Don`t overcook prawn and mushrooms
2) Serve with Jasmine rice
