**** Apple Coffee Cake ****
2 Apples - diced ( I used granny smith)
1 C Sour Cream
3/4 C Oil
4 Eggs
1 tsp Vanilla
1 Box Yellow Cake Mix
1/2 C Light Brown Sugar
2 Tbsp Cinnamon
Glaze
2 C Powdered Sugar
1 tsp Vanilla
3 Tbsp Milk
4 oz Cream Cheese - softened
In a small bowl mix together the brown sugar & cinnamon. Reserve 3 Tbsp
Dice apples and toss in the 3 Tbsp of cinnamon sugar. Mix well & set aside
In a large bowl beat together the cake mix, sour cream, oil, eggs & vanilla. Fold in the apples.
I found this recipe on thefirstyearblog.com Only change I made was adding a touch more cinnamon.
Grease a 9 x 13 baking dish and spread the batter evenly.
Bake @ 350 for 32- 35 minutes or until a toothpick comes out clean.
Let cake cool completely before adding glaze.
To make glaze:
In a small bowl stir around the cream cheese add powdered sugar, vanilla & milk. Stir until smooth.
Drizzle on top of cake.
If you do not want to use the cream cheese in the icing just leave it out. Make the icing without it
**** Apple Bran Muffins ****
1 1/2 C All Bran Cereal
1 1/2 C Buttermilk
2 C Flour
2 tsp Baking Powder
1 tsp Baking Soda
1 tsp Ground Cinnamon
1/2 tsp Salt
1/2 C Brown Sugar
2 Eggs
1/3 C Molasses
1/4 C Oil
2 Medium sized Apples - peeled, cored & diced
In a large bowl mix the all bran cereal and buttermilk. Let stand for 10 minutes
In a medium sized bowl whisk flour, baking powder, baking soda, cinnamon & salt. Set aside
Make a well in the cereal mixture and add your eggs, brown sugar, molasses & oil. Stir until
well combined. Gradually add your flour mixture trying not to over mix. Gently fold in apples.
Spoon into lined muffin tin almost to the top.
Bake @ 375 F for 18-20 minutes.
This batter made me 18 muffins.
**** Easy Apple Cobbler ****
1 Box Butter Cake Mix
2 21oz Cans Apple Pie Filling
1 tsp Vanilla
2 tsp Pumpkin Pie Spice
1 Tbsp Fresh Lemon Juice
1 Stick Butter - cut into 16 pcs
Lightly grease a 9 x 13 baking dish
In a large bowl mix the apple pie filling, lemon juice, vanilla & pumpkin pie spice
Spread evenly in the baking dish.
Sprinkle with the cake mix. Slightly press into the filling.
Place butter sporadically on top.
Bake @ 350 for 40 - 45 minutes. Check on this after 30 minutes, if you still see some cake uncooked press
lightly.
Serve with vanilla ice cream or whipped cream
