Almond or Badam Halwa is not only a delicacy that can be enjoyed during festivals but it is also a healthy and nutritious sweet dish option for children.
Recipe by Maimoona Yasmeen
Ingredients:
Almonds/Badam : 250 grms
Milk/Doodh: 1 cup
Khowa/Mawa: 100 grms
Sugar/Shakar: 250 grms
Clarified Butter/Pure Ghee: 1/2 std cup
Saffron Sticks/Zafran: few
Cardamom/Elaichi Powder - 2 tsp
For Garnishing:
Clarified Butter/Pure Ghee
Sliced Almonds, Cashews & Pistachios
Procedure:
1. Soak the almonds overnight.
2. Next morning peel their skin. If you couldn't soak overnight, boil them to facilitate the peeling.
3. Grind the peeled almonds coarsely.
4. Add milk to khowa/mawa.
5. Mix well and keep aside.
6. Add clarified butter or pure ghee to a pan OR add this clarified butter or ghee, gradually during the cooking process.
7. Add the almond paste and stir fry for 2 minutes.
8. Add khowa and milk mixture.
9. Add saffron sticks, cardamom/elaichi powder and sugar.
10. Mix well and stir continuously. Put the lid at the distance/shield to prevent spluttering.
11. Stir fry till the paste attains a thick consistency.
12. Dish out, garnish with clarified butter or pure ghee and sliced almonds, cashews and pistachios.
13. Store the remaining in an airtight container, refrigerate and use within a week.
