Air Fried Potatoes -
1.2kg (2.6lb) - All Rounder Potatoes, Washed & Chopped
1 1/2 tbsp (30ml) - Olive Oil
1 tsp (4g) - Onion Powder
1 tsp (4g) - Garlic Powder
1 tsp (4g) - Ground Cumin
1 tsp (4g) - Sweet Paprika
1 tsp (2g) - Dried Oregano
1/2 tsp (0.5g) - Red Chilli Powder (Optional)
Seasoning To Taste
Bolognese Chilli Con Carne Hybrid -
1 1/2 Tbsp (30ml) - Olive Oil
650g (1.4b) - Beef Mince (Ground Beef) 90%
4 - Garlic Cloves, Chopped
4 - Spring Onions (Scallions), Thinly Sliced & Separated
1 1/2 tsp (5g) - Ground Cumin
2 tsp (2g) - Dried Italian Herbs
2 Cans (800g - 1.7lb) - Diced or Crushed Tomatoes
120g (4.2oz) - Low Fat Mozzarella Cheese, Freshly Grated
Seasoning To Taste
Garnish -
Sour Cream
Spring Onion (Scallion), Stems
Sriracha Mayonnaise
Preheat oven to 195°c - 380°f. Line a baking tray with parchment paper. Or use an air fryer
Place the potatoes into a mixing bowl and add the olive oil and all the seasonings. Mix to combine.
Place the seasoned potatoes onto the line baking tray and bake for 25 minutes or until soft and golden, mixing halfway through. Remove and let cool.
Place a large high-rimmed pan over high heat, and add in olive oil and the beef mince. Sear for 6 minutes. Add in the garlic, spring onions (scallion), ground cumin, Italian herbs, and seasoning to taste. Mix to combine and cook for 3 minutes.
Add in the tomatoes, mix well, reduce heat to medium and simmer for 8-12 minutes, stirring occasionally. Add over the grated mozzarella cheese, allow it to melt, and remove from the stovetop. Or, you can add it on at the end.
Evenly divide and lay the potatoes into 5 meal prep containers. Place the beef mince over the top and garnish with sour cream, spring onion (scallion), and sriracha mayonnaise. Dig in.
