--------------------------------- RECIPE -----------------------------------
Ingredients:
2/3 cup Oat flour (84 g) (grind your regular oats)
1/3 cup almond flour (30 g) or almond meal
1/4 cup toasted almonds (30 g)
2 tablespoons coconut oil (26 g)
2 tbsp + 1/2 tsp Maple syrup (45 g)
1/4 teaspoon salt
1/4 teaspoon vanilla (ground) or 1/2 tsp vanilla extract
Instructions:
1. In a mixing bowl whisk together oat flour, almond flour, salt and vanilla just to combine.
2. Add maple syrup, coconut oil, vanilla extract and mix to combine.
3. Chop almonds and fold into the dough.
4. Scoop about 1,5 - 2 tablespoons of the dough and roll balls (~ 6 balls)
5. Space balls 2 inches apart on prepared baking sheet. Flatten with your fingertips and shape cookies.
6. Bake in a preheated to 350F (175 C) oven for 15 to 20 minutes until the edges are lightly golden brown.
7. Remove from the oven and cool completely on a rack.
