Don't panic and don't get greedy - Let him come to you and capitalise on his bigger and slower attacks.
-- If you miss an attack, don't try again just leave it and wait for his next attack.
Keep a distance but not too far, far enough so he can't hit you but close enough so you can hit him when he jumps and lands for minimal delay between him landing and your attacks which will minimise the chances of him hitting you back
Don't lock-onto him as it's more difficult to dodge his attacks
Try to keep him in view at all times
If you do get hit, get a distance between you and him before healing
To get repeated attempts, complete the tutorial up until Varg (Save at the beacon after killing the big knight), upload your save to the PSN cloud and turn off auto upload saves. if you fail, simply download your save from the cloud and go again, this method will save you lots of time having to replay the whole tutorial/intro section for each attempt.
