This soup is chock full of nutritious goodness, you'll love it. And please don't worry about the vegetables, use whatever you have on hand, and even the spices can be swapped out according to your tastes.
Below is a "suggested" list of ingredients, but don't be afraid to experiment:
Ingredients:
¼ cup oil, extra virgin olive oil preferred but you can use canola oil or vegetable oil instead
1 large onion or 3 to 4 small onions, more or less according to your preference
3-4 cloves of garlic, more or less according to your preference
1 large celery root, or turnip, or both.
(if you don’t have either you can substitute 1 bunch of celery instead)
2 large carrots
1 large 28 ounce can of diced tomatoes
1 tsp salt, more or less according to taste
2 teaspoons ground cumin (I used 1 tsp garam masala and 1 tsp tandoori masala)
1 tsp curry powder
Freshly ground black pepper, to taste, if desired
1 tbsp dried dill or use fresh for a better flavor
Juice of 1 medium lemon
4 cups of water
1 cup red lentils, checked, soaked and rinsed
1 cup chopped spinach, optional
