Here's how to make my Street Corn Caesar Salad.
Ingredients:
sour cream
mayo
adobo sauce
lime
fresh corn
romaine hearts
cilantro
green onions
jalapeño
cotija cheese
croutons
salt/pepper
garlic
Step 1: Make Your Dressing
Into a food processor add sour cream, mayo, adobo sauce, the juice and zest of one lime, and salt/pepper and blend.
Step 2: Prep Your Corn
Carefully cut the corn kernels from the cob and set aside. Get a pan with a little oil heating on medium heat and add your corn to let it brown.
Once your kernels are evenly toasted, add a little minced garlic and remove from the heat.
Step 3: Make Your Salad Base
Into a large bowl add your romaine hearts, finely diced jalapeño, cilantro, and green onion. Top your greens with some cotija cheese, croutons, and your toasted corn.
Step 4: Dress & Serve
Pour your dressing over your veggies and mix until everything is evenly coated.
Serve and enjoy.
