Two weeks ago, I published a 90-second keto bread using almond flour and now, I managed to publish another version using coconut flour. It only took 3 to 4 ingredients, and they turned out soft and fluffy. I found that whole eggs work better with coconut flour as it actually helps to make the coconut flour flavor not so prominent. But if you prefer using egg whites, I have also provided the option. The only downside is that when toasted, they are not as crispy as the almond flour version as coconut flour is unable to provide a crunch factor due to the nature of the flour.
If you noticed, I have reduced the amount of baking powder from the level used in the almond flour version as it tends to make the bread bitter if too much is used.

INGREDIENTS
(1. WITHOUT PSYLLIUM HUSKS)
Coconut flour = 20 g (2 3/4 tbsp)
Baking powder = 2 g (1/2 tsp)
Whole egg = 1 large (52 g) (OR Fresh egg white = 1 large / 37 g)
Room temperature water = 35 ml (2 tbsp) (OR 45 ml / 3 tbsp, if using egg white)
(2. WITH PSYLLIUM HUSKS)
Coconut flour = 20 g (2 3/4 tbsp)
Baking powder = 2 g (1/2 tsp)
Whole psyllium husks = 5 g (1/2 tbsp) (Ground until half its original volume then weigh it)
Whole egg = 1 large (52 g) (OR Fresh egg white = 1 large / 37 g)
Hot or boiling water = 70 ml (4 1/2 tbsp) (OR 80 ml / 1/3 cup, if using egg white)
(3. EGGLESS WITH PSYLLIUM HUSKS)
Coconut flour = 20 g (2 3/4 tbsp)
Baking powder = 4 g (1 tsp)
Whole psyllium husks = 5 g (1/2 tbsp) (Ground until half its original volume then weigh it)
Hot or boiling water = 80 ml (1/3 cup)
DIRECTIONS FOR ALL 3 VERSIONS
1. Add the dry ingredients into a bowl and mix to combine.
2. Add the wet ingredients and mix until well combined.
3. Transfer the batter or dough into a 4 3/4-inch square baking dish that is microwave safe and lined with parchment paper.
4. Spread evenly.
5. Microwave for 90 seconds. It is done when the top feels firm. As not all microwaves are the same, you may need to adjust the timing accordingly. If you prefer to use the oven, you can bake it for about 9 to 10 minutes at 350 F or 180 C. However, the texture will be different due to the difference in the cooking method so I would highly recommend using a microwave for such recipes.
6. Remove bread and parchment paper. Let it cool slightly before slicing into half.
7. The texture of the version without psyllium husks is soft and fluffy but it can be a little fragile and cake-like which is normal without psyllium husks.
8. The texture of the version with psyllium husks is soft and fluffy and it is firm and more bread-like.
9. The texture of the eggless with psyllium husk version is heavier, denser and is moderately soft.
10. All 3 versions when toasted are not as crispy as the almond flour version. This is normal as coconut flour tends to be heavier and moister.
11. You can enjoy these 90 seconds bread as sandwiches, grilled cheese or toasts.
