Looking for an easy and tasty, no cook lunch for your next backpacking trip? Check out this awesome recipe, Buffalo Pasta Salad with Chicken I discovered thanks to Backcountry Foodie:
*No stove required!!
INGREDIENTS:
1 cup of precooked and dehydrated pasta
1 tbsp freeze-dried red bell peppers
1/2 tbsp freeze-dried jalapeno peppers
1 tsp freeze-dried red onion
1 tbsp powdered buffalo sauce mix
4 small packets of mayonnaise
1 cup of water
INSTRUCTIONS
1 - Combine pasta, bell pepper, jalapeño and red onion in a bag or container to be used out on trail
2 - Put buffalo sauce powder in a separate bag and store in noodle bag
3 - Pack mayo packets with noodle bag
ON TRAIL
1 - Add water to noodles and let rehydrate (usually takes less than an hour)
2 - Once noodles are rehydrated, add mayo packets, buffalo sauce powder and chicken pouch
3 - Stir well and enjoy!
