Harvesting Eggplants
Eggplant is a prolific plant to grow if it's in the right location and conditions. Here’s how our friend @gingerfootgarden grows her eggplant:
- Sow in early February and transplant after the threat of frost is over.
- Plant in a sunny location (6-8 hours of sunlight) with well-draining soil.
Another helpful tip is to plant eggplants near a worm composter. The fertile soil and worm castings can minimize flea beetles, the small black insects that chew holes in the leaves.
Eggplants are nutritious and versatile, with a unique flavor that easily soaks up the flavors of a dish.
Eggplant Salad Recipe
Ingredients:
- 3 eggplants, grilled and shredded
- 10 cherry tomatoes, quartered
- 1 jalapeno pepper (or any pepper of your choice), sliced
- 1/4 of a red onion, chopped
- 3 calamansi (or the juice of 1/2 a lemon)
- Salt and pepper to taste
How to Make the Salad:
1. Grill the eggplants until the flesh is soft and easy to separate with a fork. Remove the skin.
2. Combine all the ingredients. Mix and let it sit for at least 30 minutes.
3. Serve as a side dish and enjoy!
