Fresco Dahi Bhalla / dahi bara is a delicious and refreshing dish. Here's a recipe to make it at home:
Ingredients:
For Dahi Bhalla:
1 cup urad dal (split black gram lentils)
1/4 cup moong dal (split green gram lentils)
Salt to taste
1/2 teaspoon cumin seeds (optional)
Oil for deep frying
For Yogurt (Dahi) Mixture:
2 cups thick yogurt (curd)
1/2 teaspoon roasted cumin powder
1/2 teaspoon chaat masala
Salt to taste
2-3 tablespoons sugar (adjust to taste)
For Serving:
Tamarind chutney
Chaat masala
Roasted cumin powder
Instructions:
Soaking and Grinding:
Wash and soak urad dal and moong dal in water for about 4-6 hours or overnight.
Drain the water and grind the soaked lentils to a smooth paste using very little water. The batter should be thick.
Add salt and cumin seeds to the batter and mix well.
Frying:
Heat oil in a deep frying pan or kadhai.
Take small portions of the batter and drop them carefully into the hot oil.
Fry until they turn golden brown and crispy.
Remove from the oil and drain excess oil on paper towels.
Preparation of Yogurt Mixture:
Whisk the yogurt in a bowl until smooth.
Add roasted cumin powder, chaat masala, salt, and sugar to the yogurt. Mix well. Adjust seasoning according to taste.
Assembling Dahi Bhalla:
Soak the fried bhallas in lukewarm water for 10-15 minutes. Squeeze out the excess water gently by pressing each bhalla between your palms.
Arrange the squeezed bhallas in a serving dish.
Pour the prepared yogurt mixture generously over the bhallas, covering them completely.
Drizzle tamarind chutney and chat masala over the yogurt.
Serve immediately, allowing the flavors to meld together.
