Sometimes it makes more sense to use a virtual column than a store column. For example, you may have a table with a gigantic amount of data, and the storage costs of adding a new store column could be prohibitively expensive. Whether a column is stored or virtual, column stats play a critical role in query optimization. They are what allow CockroachDB's cost-based optimizer to generate the most cost-efficient query plan.
