Today I made sweet potato mochi with melted cheese wrapped in it.
The sweet potatoes are cooked in the microwave and baked in a pan.
If you soak the sweet potato in water to remove the lye, it will turn out a beautiful yellow color.
Topping with black sesame seeds adds a crunchy texture and makes it delicious☺.
▷Ingredients (for 9 pieces)
300g (2 medium sweet potatoes)
2 tbsp + 50ml water (3 tbsp + 1 tsp)
1/3 teaspoon salt
2 tbsp honey or sugar
3 tbsp potato starch
3 slices cheese
black sesame seeds
▷How to make:
1. Peel sweet potatoes and cut into 1 cm thick slices. (Soak the sweet potatoes in plenty of water for about 5 minutes to remove the scum.
2. Drain off the water from the sweet potatoes, transfer to a bowl, and add 2 tbsp. of water. Cover with plastic wrap and cook at 600W for 4 minutes. Add more water and cook for about 4 minutes on 600 W. Add 1 minute at a time until sweet potatoes are soft.
3. Mash sweet potatoes with a masher, add salt, honey, and water and mix well. Add potato starch and mix until powdery. (The amount of water content varies depending on the variety of sweet potato, so if the dough is too watery, add more katakuriko; if it is too dry, add more water.)
Cut the cheese slices into thirds and fold into thirds to form a shape. Divide the dough into 9 pieces (about 42g), roll into a ball, wrap the cheese slices and shape into a ball. Top with black sesame seeds if desired.
5. Heat oil in a frying pan and brown the dumplings, starting from the side with the black sesame seeds.
