Learn how to cook okra as a beginner with this easy to follow step-by-step guide from the Good Housekeeping Cookery team.

Okra is a vegetable originally from Africa and is used in a variety of Caribbean and Indian dishes like soups, curries and stews. Okra is also known as bhindi or lady’s fingers because of its long shape.

Knowing how to prepare okra is important as the pods which contain rows of edible seeds release a sticky liquid when chopped and cooked, which makes okra a perfect addition to liquid-based recipes that need thickening. But, not knowing how to cook okra without having to deal with the slime has a tendency to put cooks off including it in their dishes.

Watch this video to learn how to prepare okra in under 5 minutes and discover a wonderful vegetable to add to a variety of dishes.

Firstly, you should choose firm, bright green pods to cook. Wash and remove any wispy black hair on surface.

If cooking whole, trim the okra carefully with a sharp knife, removing the tough tip but without cutting into the seed pod.

Cook in boiling salted water for 3min until tender when tested with a knife. Okra can also be steamed for 5min.

Okra can also be chopped and added to stews to thicken them.
