🌟Ingredients List for your convenience:
FOR THE RICE:
4 cups of basmati rice
Water to cook rice
Salt to taste
1 tsp of cumin seeds
3 bay leaves
one cinnamon stick
2 pieces star anise
1 tsp fennel seeds
5-8 pieces of whole clove
tbsp of oil
BIRYANI SPICE MIX:
½ of a cinnamon stick
2 pieces star anise
½ tsp of fresh mace
4 whole cloves
½ tsp of whole peppercorns
1 tbsp of coriander seeds
1 tbsp dried fenugreek
8 green whole cardamom pods
1 heaping tbsp of fennel seeds
2 whole black cardamoms
1 heaping tbsp of cumin seeds
half of a whole nutmeg
4 bay leaves
½ tsp turmeric powder
Red chili powder to taste
Salt to taste
CHICKEN MASALA:
handful of fresh mint leaves
3 medium size tomatoes here sliced
one cup of dried prunes
one whole lime sliced thinly
handful of chopped coriander leaves
8 garlic cloves chopped
2 heaping tbsp of minced fresh ginger
2 large onions sliced thinly
4 medium sized peeled potatoes cut into chunks
1-½ chickens, about 5-7 lbs.
1/2 cup or as needed of oil
Water as needed to cook
¼ cup plain yogurt
Crushed tomatoes or pureed as needed
orange food coloring, ⅓ tsp
1 cup cold milk
