Minestrone like my grandma's - Italian vegetable soup | Wintertime is soup time-collab
As part of the project "Wintertime is Soup Time", a collaboration between 8 YouTube channels, I cook an Italian minestrone in this video. I always loved this soup when my grandma used to cook it for me. And my family still loves minestrone today.

Minestrone ingredients for 4 people:
50 g carrots,
50 g celeriac
30 g celery stalks
30 g savoy cabbage
50g fennel
100g potatoes
50g onion
30 g leek
2 tbsp olive oil
1 tbsp tomato paste
1.2 l vegetable broth
Salt
30 g small durum wheat noodles, cooked
50g green beans, cooked
30g Puy lentils, cooked
20 g spinach, blanched
grated parmesan or nutritional yeast
