Ingredients
¾ lb shrimp
1 shallot, diced
4 cloves garlic, minced
1 green chile, thinly sliced
3 eggs
2 Qt day old rice
1 cup fresh pineapple, diced
¼ cup golden raisins
⅓ cup raw cashews
¼ cup green onions sliced
3 Tbsp soy sauce
1 tsp fish sauce
Salt
½ tsp curry powder
¼ tsp white pepper
Green onions to garnish
In a small bowl mix together the soy sauce and fish sauce then set that aside.
In another bowl whisk the eggs until homogeneous.
Heat a wok or large pan over high heat until very hot. Add oil then add the shrimp and let cook for 2 minutes. Flip your shrimp and cook for 1 more minute then remove from the pan.
Add a little more oil and sauté the shallots, garlic and chile for 1 minute. Then add the eggs and stir fry until cooked. Add the day old rice and cook until dry 2-3 minutes then add the sauce, pineapple, cashews, golden raisins, curry powder, white pepper and salt. Mix well add the shrimp back, mix again.
Sevre in a pineapple or a bowl and garnish with green onions.
