Modifying your lights with grids gives you way more control over the spread of light on your subject and environment.
A grid won't change the softness or hardness of your light. It just restricts the spread of light in a controllable way.
Quality of light (ie. Hardness or softness) is solely determined by the size of the light source in relation to the subject.
The spread of light is a function of the size of the light pool when it strikes the subject.
You can have a hard quality of light (from a small light source) that is spread broadly on your subject.
You can also have a hard light that is restricted in spread (by a grid or other means) to a small area of the subject.
