Eclair Recipe:

Eclair dough
8 oz water
4 oz butter
4 oz flour
8 oz eggs (4)
1 teaspoon salt
1 tablespoon sugar


Pastry Cream
320g milk
80g sugar
28g butter
28g corn starch
120 eggs (2)
60g pistachios

Chocolate Icing
1/2 cup powdered sugar
1/4 cup cocoa powder
3-4 tablespoons milk
