Why do you need to exclude certain post types from your sitemap?
Normally, you want all your content to be indexed by Google. That's why you put them in your sitemap. However, there are some content that are very short and provide little value by their own. Those content should not be indexed by Google.
By default, Yoast SEO include all custom post types in the sitemap. This is a good thing. However, there are cases, as mentioned above that you want to exclude some post types from the sitemap.
This plugin is all you need to exclude custom post types from Yoast SEO sitemap.
