Sourdough can be really intimidating and I think that drives a lot of people away from wanting to try it. Since I changed my approach about a year ago I've been enjoying my sourdough experience (and the bread!) so much more and I'd love to pass that confidence and ease onto you!

Honey Whole Wheat Sourdough Sandwich Bread:
(This is the double recipe, half if you just want one loaf)

1 rounded cup sourdough starter (active preferred)
1/4c Oil of choice
1/4c Honey, crystallized fine
2.75c warm milk or whey
6c bread flour
2c whole wheat flour
3tsp salt

In the evening, mix until relatively incorporated. Allow to sit 30-60 min, then knead 20 seconds on counter until smooth. Cover in bowl overnight and divide and shape in the morning. Butter pans and bake at 375°F for 40-50 min depending on your oven and home humidity/temperature. Butter crust while still warm, best sliced when fully cooled. Keeps 3 days room temp 6 months in freezer.
