Ingredients:
For the spice paste (rempah):
1 large onion, chopped
4 cloves garlic
2-3 red chilies (adjust to taste)
1 thumb-sized piece of ginger
1 thumb-sized piece of galangal (or more ginger if unavailable)
1 stalk lemongrass, white part only, finely chopped
1 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon cumin powder
Other ingredients:

1/2kg beef (such as chuck roast or beef stew meat), cut into chunks
2 cans (13.5 oz each) coconut milk
3 kaffir lime leaves (optional)
2 tablespoons tamarind paste
2 tablespoons brown sugar (or palm sugar) optional
Salt, to taste
Cooking oil
