Here is how to prepare:

Place dried mushrooms in a small pot, add enough boiling water to cover, set aside until mushrooms rehydrate a bit (about 10-15 minutes).
Shred cabbage and cut into smaller pieces.
Clean and slice button mushrooms.
After dried mushrooms rehydrate, boil for about 10 minutes on low (check if they're soft; if not, boil for a bit longer. Add more water if needed).
Prepare and measure out the rest of the ingredients and equipment needed.

Boil and cool potatoes.

Wash beets and roast in the oven (covered) for about 1 hour (until soft) at 350F. Remove from oven and cool.
Peel and grate on the smallest vegetable grater.
Prepare and measure out the rest of the ingredients and equipment needed.

a large sautéing pan
a medium sautéing pan
a cutting board
clean surface for rolling
a large soup pot
a spatula
a sharp knife
