Cacao Nib Almond Cashew Butter 🍫 [🇬🇧/🇬🇷]

Ingredients: 📄
• 200g (1.5 cups) dry roasted almonds
• 100g (0.75 cups) dry roasted cashews
• 1/2 tsp vanilla sweetener
• 1/2 tsp sea salt
• 30g (1/4 cup) cacao nibs
How to make:
1. Arrange a rack in the middle of the oven and heat to 180°C. Place the almonds and cashews on a rimmed baking sheet and bake until lightly golden brown, for about 10-12 minutes. Be very careful not to burn the nuts! Cool for 10 minutes.
2. Transfer the nuts to a food processor. Turn the food processor on and let it run for 10-12 minutes, scraping down the sides as necessary (about every 2 minutes). During this time, you’ll see the nuts go in stages from crumbs to a dry ball to a smooth and creamy “liquid” butter. Depending on your food processor, the time of processing will vary.
3. Next add the vanilla sweetener and sea salt. Process again for 30 seconds.
4. Next add in cacao nibs and pulse a few times to incorporate them into the nut butter.
5. Transfer to a mason jar and store at room temperature for 2 weeks. Store in the fridge for up to a month if you want it to last longer.
