Chicken Birria Tacos made in under one hour.
Chicken Birria Tacos
Ingredients:
Skinless chicken thighs
Taco seasoning (I used Elk Creek Ultimate Taco Seasoning)
Tortillas
Mexican blend cheese
Diced onion
Finely chopped coriander (garnish)
Limes (garnish)
Avocado Crema:
2 avocados
300ml of sour cream
The juice of 2 limes
½ a cup of coriander
2 cloves of minced garlic
½ a teaspoon of cumin
½ a teaspoon of salt flakes
¼ teaspoon of black pepper
Birria Sauce:
3 cups of passata
3 cups of chicken stock
½ a cup of avocado oil
1 tablespoon of chilli oil
2 onions finely diced
2 tablespoon of dried oregano
2 tablespoon of dried thyme
A good pinch of salt flakes
And a normal pinch of black pepper
Hydration:
2 x Beers
