#shorts MIDI learn in Ableton Live is limited and project-based (= you need to redo your assignments from scratch with every new project). Use control surface scripts instead! Pick a preset or create your own scripts, so you only make your assignments once and then you're good to go. Also, what any given physical slider/knob/button controls depends on which track you have selected as opposed to it always controlling only the same, one parameter. Also, you can have banks of parameters, so, again: the same one physical controller can control many different parameters on your device depending on which bank you have selected. This means that even with a controller like the iRig PADS, which only has 1 slider and 2 knobs, you can for instance control ALL YOUR TRACKS' volume sliders, all the parameters on any of your devices, AND no matter what MIDI notes you set your drum pads to (for use with another piece of software, like GarageBand), they'll always control the 16 pads on any drum rack back in Ableton Live!
