Who needs boxed cake when you can whip up an easy Chocolate Cake recipe using pantry items. This super moist and rich chocolate cake is perfect for birthday parties, special occasions, or if you just feel like indulging in something chocolatey. Plus you can bake it all in one cake pan saving you the trouble of icing layers. Can't get any easier than that!
I've also included dairy-free and vegan alternatives to some of the ingredients to make this recipe vegan friendly.

Ingredients:
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder (Dutch Processed)
2 1/4 teaspoons baking soda
1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon instant espresso powder (optional)
2 cup of sugar
1 cup milk or *non-dairy milk
1/2 cup vegetable oil
2 large eggs or *1/2 cup of apple sauce
1 1/2 teaspoons of pure vanilla extract
1 cup boiling water (or 1 cup of hot brewed coffee)
Chocolate Frosting:
3 cups of powdered sugar, sifted
1/2 cup of cocoa powder, sifted
1/2 cup (1 stick) of butter or *1/2 cup of dairy-free butter replacement
1/2 cup of vegetable shortening
3-4 tablespoons of water
1 teaspoon of pure vanilla extract
