🔥 Hang the picanha over the fire, fat side first over medium heat.
🔥 After around 1 hour (internal temp 100’) flip it and cook the meat side for 10 min. Until internal temp 110/115’
🔥 Slice the picanha into steaks and season with your favorite @bbqguys rub
🔥 Spread the embers and sear each steak for 3 min per side (until 135’)
🔥 Slice and enjoy
