Fast Pickled Carrot And Daikon Recipe | Vietnamese Pickled Daikon & Carrots for Banh Mi(Do Chua)

Hello everyone, Today I show how to cook pickled carrot and daikon easily and quickly. Pickled carrot and daikon tastes sour and slightly crunchy.

▶ Ingredients :
1 large carrot
1 large white radish
A pinch, Salt (clean the daikon)
1/3 cup white sugar
1/4 cups boiling water
1/4 cup rice vinegar
▶Method:
1. Peel the carrot and julienne them into thick batons.
2. Peel the daikon and julienne them same as carrot.
3. Massage the daikon with the salt. This is to take away the bitterness and wash with the water. Darin off the water.
4. Mix the carrots and daikon to combined well.
5. Add the vegetables into a jar.
6. In a mix bowl, ad the white sugar, boiling water, and rice vinegar. Stir until the sugar has dissolved.
7. Pour the pickle brine over the vegetables. Leave pickled the carrots and daikon for 2-3 hours or overnight in a temperature room.
8. Store the pickled carrot and daikon for 2 weeks in the refrigerator.
