Why don’t we eat rare chicken?

Chicken has water-permeable channels extending from the surface deep into the meat, making it easy for bacteria to travel deep into the muscle. Good for marinating, but not for food safety.

Cows muscle is much denser than chicken. Bacteria does not easily penetrate deep into the cow's muscle, causing us only to have to sear the outside to kill off most bacteria.

Through the slaughter process, the animals digestive system can transfer into the meat muscle contributing to these dangerous bacteria being present in the first place.
