RECIPE FOR 1 LARGE CAKE (180 degrees for 50-55 mins)
OR 2 MEDIUM SIZED CAKES (180 degrees for 40-45 mins)
• 6 Medium Size Carrots (Grated)
• 4 x Eggs
• 2 Cups Caster Sugar
• 2 Cups Self Raising Flour
• 400g Butter
• 100g Wallnuts
• 100g Raisins
• 1 Tbsp Spoon Cinnamon
• 1 Tbsp Nutmeg
• 2 Tsp Vanilla Extract/Essence
• 1 Tsp Baking Soda
• 1 Tsp Salt
• 1 Tsp Baking Soda
RECIPE FOR ICING
• 400g Philadelphia Cheese
• 1.5 Cups Icing Sugar
• 0.5/1 Lemon (Depending on taste)
#CHEFSAAD TIP!
• Grate Lemon & Orange peel, with a sprinkle of sugar and microwave for 20s
• Leave to dry and then spread over the cake once it has been covered in the icing
