Toasted coconut has a rich nutty flavor and crispy texture which is perfect for adding to or topping off baked goods, ice cream, granola, or eat it by the spoonful. Using the oven and the microwave are my quick and easy methods to toast coconut. The oven is my favorite method because the coconut is evenly toasted, but if you do not feel like turning on the oven on those warmer days, microwaving coconut will work as well. You can toast shredded, chips, or flaked coconut, though the sweetened versions will toast much quicker.
Ingredients
1-2 cups of coconut (sweetened or unsweetened shredded, chips, or flakes)
Directions
Oven
On a baking tray, evenly spread the coconut out. Bake in a preheated oven at 325 °F for around 9- 10 minutes, stirring every 3 minutes, until the coconut is toasted.
Microwave
In a microwave safe plate, evenly spread the coconut out. Microwave in
60 second intervals, for around 10 minutes, until the coconut is toasted.
