GRANDMA'S BANANA PUDDING | THE BEST BANANA PUDDING EVER! // LoveLexyNicole

Welcome back to my channel :) We have a special guest on the channel today! My grandma traveled all the way from Maryland to share her famous banana pudding recipe. This has been a family favorite for years and she always makes it every time she visits me. I hope that you and your family enjoy this recipe as much as we do. Grandma's Banana Pudding:
-1 box of vanilla wafers
6 bananas
2 cups of milk
-1/2 cup of sugar
-1/3 flour
-3 eggs (yolk only)
-1 tsp vanilla extract
-dash of salt
Meringue Topping
1/3 cup sugar
3 eggs (whites only)
Heat oven to 400 degrees
Add half of your milk into large bowl with 1/2 cup of sugar, and 1/3 cup of flour. Give it a good whisk until everything is well mixed and there are no lumps.
Crack the three eggs making sure to seperate the yolk from the whites. Put the whites to the side and add the yolk only to the bowl and give a good mix. Then add your pinch of salt and rest of the milk and whisk until everything is well incorporated.
Turn stove top to high heat and add water to pan and make sure the water touches the top layer of your double boiler. When water is boiled it is time to cook pudding. You want to whisk it the entire 15-20 minutes so it does not stick. Add vanilla extract when it starts to thicken up.You want to cook it until it is thick. It should be the same texture as store bought pudding.
Wants the pudding is thick, allow it time to cool on counter or put it in the fridge like we did for 10 minutes. If it gets too thick just add a splash of milk and mix well until desired consistency. Pudding must be cool or it will turn bananas brown and soggy.
Now it is time to assemble the banana pudding. You want to layer pudding, wafers, and chopped banana. We did three even layers of each ingredient finishing the top with left over wafers.
MERINGUE TOPPING:
Add the egg whites to stand mixer and allow it to whisk until slightly foamy. Then add the 1/3 cup of sugar and whisk for a few minutes until it is nice and fluffy and thick.
Add to top of banana pudding and make desired design. Bake in oven at 400 degrees for 5 minutes or until the top is slightly browned.
Allow banana pudding time to cool in fridge for at least an hour and ENJOY!
Recipe Notes:
-In this video we doubled this recipe to make a large portion!
-if making single portion you need a baking dish that is atleast 1.5 quarts. If making double like we did you need atleast a 2.5 quart baking dish.
