🌯 I’ll be honest – I am not sure if Mexican sausages are a real thing. Or at least they’re probably not like these, which are more of kofte than sausage really. But, listen, do we really care when they taste this good?
🛒 Ingredients
Sausages
100g reduced-fat chorizo, chopped
500g 5% pork mince
1 tbsp fajita spice mix
10g garlic, chopped
10g Tomato puree
1 tbsp olive oil
The rest
1 red onion, chopped
Squeeze of lime juice
Water
8 wholemeal Wraps
Salsa
Lime
Avocado
Coriander
👨🏻🍳 Method
This is a great tip to remove the harsh taste of onions to make them more enjoyable in salads or in tacos, like this recipe. Simply soak the chopped lemon in a bowl with just enough water to cover then and a squeeze of lime or lemon juice for 15 mins. When you’re ready to eat them, drain the water away and serve.
Throw the chorizo into a blender and blitz until it’s the same kind of consistency as mince. Add the pork mince, fajita mix, garlic and tomato puree to the blender and blitz again so it’s all mixed thorugh.
Form the mixture into about 8 sausage shapes. Heat the olive oil in a frying pan on a medium heat and gently fry the sausages for about 10-15 mins until cooked through.
Serve in a wrap with some salsa, sour cream, some of the onions, avocado with coriander for garnish.
