This cold soba is perfect for a hot summer day and takes less than 15 minutes to whip up. It's a healthy, quick and delicious meal that I would randomly crave!
Ingredients:
1 bunch soba
1 tablespoon soy sauce
1 table spoon mirin
1 tablespoon sesame oil
garnish with cilantro, scallion, and sesame seeds
Directions:
1. Boil the soba noodles according to package and preferred softness.
2. Dunk into an ice bath
3. Drain and put into mixing bowl
4. Add soy sauce, mirin, and sesame oil
5. Sprinkle cilantro, scallion, and sesame seeds. Mix it all up and serve!
