i never really asked this question to the artists whose streams and timelapse videos i learned from, but the answer came to me as i gained experience. it's definitely a lot easier not to miss any gaps if you pick a dark color against a light background and vice versa.
flat color layers, or flats as some people call them, are not really essential if, say, you work better working on a very rough draft and just cleaning it up as you go. but if your working style is similar to mine, having a layer for the silhouette makes the process a lot easier.
