Twenty years ago, Bérengère Quellien took over the family wine estate and undertook the conversion to organic, of which she is one of the pioneers in Graves. François Foutrier set down his bags in Patiras, an island in the Gironde estuary, where he manages the only restaurant. He introduces committed local producers, including an oyster refiner, and the creator of the first Bordeaux whisky. After flying over the Garonne, head to Bardigues, where a young couple wants to breathe new life into a family château and turn it into an agricultural estate that is a pioneer in the ecological transition. Finally, head to the Canal de Garonne, which connects Toulouse to Bordeaux, and of which Moissac is one of the most beautiful stops on the route.
