Air Fryer vs Instant Pot Pumpkin Muffin Bites
Following up on our 7 canned foods that help manage blood sugar video, we use a can of pumpkin puree from our food storage to make delicious pumpkin muffin bites in silicone molds. We bake one tray in our air fryer and the other in our Instant Pot and compare the differences.

Recipe: Pumpkin Muffin Bites
Makes 14 bites in silicon egg bite molds
1 1/2 cups all purpose flour
1 cup sugar
1 tsp baking soda
1 tsp baking powder
1 tbsp pumpkin pie spice
1/4 tsp salt
1 egg
3/4 cup pumpkin puree
1/2 cup plain Greek yogurt
1/2 cup softened butter or ghee
Whisk dry ingredients together in a medium bowl. Add wet ingredients and stir together into a thick batter. Spoon into greased egg bite molds and bake using one of the following methods:
Instant Pot: Cover mold with foil and place in the inner pot on a rack over
1 1/2 cups water. Pressure cook on high for 12 minutes. Do a quick release. Remove mold and turn muffin bites out onto a rack to cool.
Place mold in the air fryer and select the "Bake" setting at 350°F. Set time for 15 minutes. Allow to sit in the air fryer with the heat off for an additional 5 minutes. Remove mold and turn muffin bites out onto a rack to cool.
