Leetcode-style interviews are intended to test an applicant's thought process for solving unknown problems. Unfortunately, it has become a way to test an applicant's ability to memorize trivia.
Unless you expect your new hires to be sorting an array into a binary tree on a daily basis, don't ask that in an interview. Instead, set up scenarios or work through existing problems that the two of you can solve together. It gives you an opportunity to talk about the job and the challenges you face, the applicant gets the opportunity to showcase their skills, and you both get the opportunity to see what it will be like working together.
