Recipe:
1 Pound Cake (store bought or homemade)
1 Pineapple, peeled & cored (optional: canned slices, in 100% juice), juice reserved
1 stick butter, melted
1/4 cup brown sugar
1 tsp vanilla
reserved pineapple juice
Vanilla Ice Cream
Caramel Sauce
Directions:
(1) Cut pound cake into 1" slices
(2) Cut pineapple, if using whole, into 1/2" slices
(3) Combine melted butter, brown sugar and vanilla, whisk until sugar dissolves
(4) Add reserved pineapple juice to taste (you will have more than needed if using canned pineapple; if using whole pineapple, add all of the juice)
(5) Brush mixture onto pound cake slices and pineapple slices
(6) Flip pound cake slices onto grill, basted side down
(7) Repeat with pineapple slices
(8) Grill for about 1 to 1 1/2 minutes, baste top sides of each and flip
(9) Grill for another 1 to 1 1/2 minutes until pound cake is golden brown on both sides
(10) Remove cake once grilled to desired doneness, continue grilling pineapple until golden brown on both sides
(11) Remove pineapple from grill and assemble desserts: add two slices of grilled cake and 3-4 slices grilled pineapple to each bowl.
(12) Top with vanilla ice cream and caramel drizzle and enjoy!
