Persian rice. Today I will show you how to make persian rice with tahdig. My jeweled rice pilaf with dried apricots, cherries, raisins, pistachios and slivered almonds is crispy on top and is perfectly cooked. I will use basmati rice for my persian rice.

2 cup basmati rice
12 saffron threads
1 onion
1/3 cup dried apricots
1/3 cup dried cherries
1/3 cup raisins
1/8 tsp cinnamon powder
1/8 tsp cumin
1/8 tsp all spice
1/8 tsp black pepper
1/8 tsp ground cardamom
salt
6 tbsp butter
