This savory scone recipe is delicious. We serve them at Eating Royally (my Dallas based catering company) at dinner parties. They are so versatile, filled with pepper jelly and sliced deli meats or just hot form the oven with melted butter.

Crispy Prosciutto Scones
5 cups all-purpose flour
¼ cup granulated sugar
2 tablespoon baking powder
2 teaspoons kosher salt
1 cup butter
4 large eggs
1 1/3 cup buttermilk
1 1/3 cup grated gruyere
1 cup crumbled fried Prosciutto (or bacon)
Preheat the oven to 375 degrees f.
In a food processor mix together the flour, sugar, baking powder, salt and butter until you have course crumbs. Add the Gruyere and Prosciutto.
Whisk the eggs lightly and combine with the buttermilk. Add to the flour mixture and stir until just moist. Mix lightly.
Roll the dough 3/4 inch thick. Cut out 2 inch squares. Place the scones on a baking sheet lined with parchment or a silicone mat, and lightly brush with the egg yolk and sprinkle with sesame seeds.
Bake for 20 minutes, or until golden.
