Here's a classic recipe for Beef kaleji ( liver ) a popular dish in Karachi known for it's rich flavour and spices :

Ingredients

Beef liver ( kaleji ) : 1000 kg clean and cut into small pieces

Onion: 2 medium, finely chopped
Tomato: 2 Medium, finely chopped
Ginger garlic paste:1 tbsp
Green chillies 2 finely chopped
Yogurt: 1 cup
Oil: 1 cup
Lemon juice 1 tbsp
Veniger: 1/2 cup for cleaning kaleji
Fresh coriander: 1 tbsp

Spices:
Turmeric powder:1 tbsp
Red chilli powder:1 tbsp
Corriender:1 tbsp
Cumin seeds:1 tbsp
Cumin powder:1 tbsp
Garam masala :1/2 tblsp
Salt: to taste


INSTRUCTIONS:

1: PREPARATION:

wash the liver thoroughly and soak it salt water/vaneger water for 10 minutes
This help removes any strong odor or bitterness

Drain and pat the liver pieces dry with a paper towel

COOKING:

heat oil in a pan .Add onion and ginger garlic paste Cumin seeds and let them splutter

Cook until golden brown

Cook until the raw smell disappeares

SPICES AND TOMATO:

add all dry spices with salt stir well
Add chopped tomatoes and cook until they soften and the oil separates

COOK THE LIVER:

Add the liver and Cook on medium flame for 5 to 7 minutes stirring occasionally. Avoid overcooking to keep the liver tender

FINAL TOUCHES :

reduce the heat and add yogurt . Stir well to combine and cook for another 5 minutes until the oil surface.

Sprinkle Garam masala add green chillies and Coriander stir gently

GARNISH:

Garnish with fresh coriander and a squeeze of lemon juice

SURVIVING:

Surve hot with naan chapati or paratha . You can also pair with plain rice or a side . Of salad for a complete Karachi- style meal
