A mix of solid combat strength and knowing how much you should abuse the stage mechanics will help you succeed in these fights.
Here's a basic summary of my feelings regarding approaching these:
Welcome to Easy Mode: don't go too far out of your way to make use of the aura. It's a helpful boost when trying to take out the Mitachurls (who should be your primary targets due to their health pool), but does little to assist you against the archers. Go after the archers as necessary, and let the melee mobs come to you in the process.
Don't Sweat It: Electro spam will win this rather quickly, as will using other elements like Cryo and Geo for support. Don't let up your attacks, as the main 180 second timer isn't shown on-screen.
Art of the Cannonball: you're given Anemograna in the arena, but if you're bringing in Geo constructs (like the Geo Traveler's Starfell Sword), they're completely unnecessary. Once the plunging attacks get near their maximum power, you can just repeatedly abuse them to swiftly win the fight. Just make sure you continue to make constructs to leap off of.
Battle of an Epoch: the shockwaves are incredibly powerful, and should be a primary source of your damage. It's probably possible to win this with just Barbara and Kaeya, but don't forget that you have normal attacks outside the shockwaves if you get the Ruin Guards to low health.
To the Bitter End: you'll need steady damage output to win this, even with the buffs in play. Set up the health of your attacker(s) in advance by going to a high-altitude teleporter (e.g. Mt. Hulao) and repeatedly using plunging attacks from great heights. Destroy the Mitachurl's infusion, then hammer him with your attacker. In my case, rotating Melt and Vaporize for Amber's charged attacks worked wonderfully (rotating the two is necessary, as Kaeya's elemental skill doesn't come off cooldown fast enough to rely solely on that).
Shock Me, I Dare You: like with the Cannonball challenge, once you get charged attacks set up with their maximum strength, you can mostly rely on them rather than regular attacks. Be sure to give yourself time to get your stamina back, however, and don't let the Geo Samachurl that spawns act freely.
Want To Know How I Got These Icicles: the shockwaves from the auras here are even more devastating than the ones from the Epoch challenge. Just make sure to wait for the Samachurl's opening dash attack, so you'll have the time needed to activate the aura. Decoys like Baron Bunny also help tremendously with this.
