THELMA’S GLUTEN STEAKS
Ingredients
Vege-Steaks
1 Med. Onion, cubed
1/2 Cup Quick Oats
1/4 Cup Nutritional Yeast
1/4 Cup Wheat Germ or Flax Seed Ground
1 1/2 Cup Water, warm
2 - 2 1/2 Cups Gluten Flour
Broth
1 1/2 Quarts of water
2 Tbsp. McKay’s Chicken Season or Beef
2 Celery Stalks, finely chopped
2 tsp. Basil
1/2 Cup Vegetable Oil
2 Cubes or 2 tsp of Vegex or Vegetable Seasoning
1/2 Cup of Soy Sauce or Bragg’s Liquid Aminos
1 Med. Onion, Chopped
1/2 Cup Nutritional Yeast
Directions
Vege-Steaks: Whiz the onion, and all vege-steak ingredients except flour.
Pour resulting liquid into mixing bowl and add flour. The more flour the denser the steak will be.
Quickly mix and work until a nice smooth ball of dough is formed. Cut ball of dough in half and
form two 6” loaves. Cover with damp cloth and set aside for 2 hours. After the dough has relaxed for 2 hours, slice the loaves into 8 pieces each. Take each piece and stretch to form a flat patty shape.
Broth: Combine all broth ingredients into a large pot and bring to slow boil. Drop patties into
broth, cover and stir every 5 to 10 minutes for one hour.
When done, serve in place of steak, or bread and fry for sandwiches. May also grind to use as a burger substitute. Left over broth may be saved to make more steaks or as a base for gravy.

Breakfast Un - Sausage
Ingredients
3 Cups water
1/4 Cup Bragg Liquid Aminos
2 Tablespoons Granulated Onion
1/2 Tablespoons Granulated Garlic
1/2 - 1 Tablespoon Crushed Red Pepper, (I used 1/2 T.)
1 teaspoon Bakon Hickory Seasoning or Liquid Hickory Seasoning
1 Tablespoon Olive Oil
1/4 Cup Maple Syrup
1 teaspoon Sage
1/2 teaspoon Nutmeg
1 teaspoon Salt, (optional) (I used.)
2 1/2 - 3 Cups Quick Oats
Directions
Preheat over to 350 Degrees
Place all ingredients in a medium pan, except for oats, and bring to a boil, lower heat
and simmer for 2 minutes. Add oats and stir. Remove from heat and place lid over pan
stirring occasionally. When mixture is cooled enough, place each patty on sprayed
cookie sheet using an ice-cream scoop, then press with the palm of your hand or
hamburger press to make sausage patty. Bake about 15 minutes on each side or until
golden brown.
Recipe makes 20-22 patties.
Cook’s Note…
Make sure to add crushed Red Pepper. Adjust to your liking if too spicy.
